Mascarpone sterilgarda  250g   Fresh Ricotta Sterilgarda 400g (For the pastry)  |  00 flour 250g   |   Icing sugar 100g  |  Orange peel to taste q.b  |  2 egg yolks   |   Butter 125g  (For the filling) Chocolate drops 100g  |  Cinnamon to taste q.b.   |  Sugar to taste q.b.  | Potato starch 10g   | 2 egg yolks| Orange peel to taste q.b

Preparation and assembly

For the pastry
1. Mix all the ingredients
2. Form a loaf, wrap it in cling film and leave to rest in the fridge for 30 minutes

For the stuffing
1. Blend the ricotta with the other ingredients
2. Add the mascarpone
3. Add the chocolate chips and mix

1. Make mini shortcrust pastry tarts
2. Pour the cream into the tarts
3. Bake in a static oven at 180 degrees for 60 min
